Sawdust & Espresso
A warm, approachable drive-through and walk-up coffee and comfort food stop being built right here on our corner of Walla Walla.
Sawdust & Espresso is the restaurant side of the Building Half Acre project — a quick-service concept built around espresso, comfort food, and small-town everyday convenience.
We’re restoring existing buildings on our property and transforming them into two connected spaces: a working woodshop on one side and a warm, welcoming restaurant on the other.
This page follows the progress of that build and the ideas behind it.
The Idea Behind Sawdust & Espresso
For years we’ve talked about opening a simple, welcoming place where people could get a great espresso, grab a quick meal, and feel genuinely glad they stopped.
Not a giant restaurant.
Not a complicated concept.
Just a place that feels friendly, dependable, and woven into the everyday rhythm of the community.
Sawdust & Espresso is designed as a drive-through and walk-up quick-service spot, serving espresso drinks, comfort food, and a few simple favorites that people can rely on.
What We Plan to Serve
The menu is being designed to be simple, satisfying, and worth coming back for — familiar favorites done in a way that feels approachable and craveable.
You’ll find things like:
• espresso drinks and coffee
• fountain drinks
• milkshakes and soft serve ice cream
• loaded hot dogs
• paninis
• french fries and poutine
It’s the kind of menu built for everyday visits — quick, familiar, and satisfying.
Restoring a Piece of Half Acre
Sawdust & Espresso isn’t being dropped into a generic new shell.
It’s being carefully built into an existing structure on our property — a space with history, constraints, and character.
That matters to us, because we want this place to feel rooted rather than manufactured.
One side of the building becomes the woodshop. The other becomes the restaurant. And because both are being built together, the workshop will help create many of the restaurant’s details — including signs, fixtures, and handcrafted elements that make the space feel like ours.
Follow the Build
Every step of this project is being documented through the Building Half Acre series.
From planning and restoration to construction and opening day, we’re sharing the real process — the progress, the setbacks, and the lessons learned along the way.
If you enjoy watching projects come to life, you can follow the journey here.
Opening Soon in Walla Walla
Sawdust & Espresso is still under construction, but the vision is clear:
a small place with good coffee, comforting food, and an atmosphere that feels welcoming from the moment you pull in.
